OLIVE TREES HAVE BEEN GROWING ON CRETE SINCE 3,000 BC AND ARE THOUGHT TO HAVE BEEN THE SOURCE OF WEALTH OF THE MINOAN CIVILIZATION. TODAY, GREECE PRODUCES 120,000 TONS OF TABLE OLIVES PER YEAR. IN CRETE YOU CAN FIND GREEN OLIVES, THE TIGHT-SKINNED BLACK KALAMAT OLIVES AND THE POPULAR WRINKLED VARIETY THAT IS CURED IN SALT („RAISIN OLIVES”). THROUGHOUT HISTORY, OLIVES HAVE BEEN USED MORE AS AN APPETIZER BEFORE THE ACTUAL MEAL AND THIS PRIMARY ROLE CONTINUES, ALONG WITH MANY INVENTIVE NEW WAYS OF USING THE OLIVE IN COOKING AND BAKING.
OLIVE PASTES CAME ABOUT NATURALLY AS A BY-PRODCUT OF THE OIL-MAKING PROCESS. THE GROUND, CRUSHED OLIVES WERE KNEADED AND THE OIL EXTRACTED. IN CRETE THEY ARE SIMPLY FLAVORED WITH LEMON JUICE AND SPICES SUCH AS OREGANO OR PERHAPS GARLIC.
