KNOWN IN CRETE AS PAXIMADIA, RUSKS ARE THE MAINSTAY OF A CRETAN MEAL. QUITE SIMPLY THEY ARE TWICE-BAKED BREADS THAT CAN VARY GREATLY IN SIZE, SHAPE AND BASIC INGREDIENTS. THEY CAN BE ROUNDS OF WHOLE-GREAIN BARLEY THE SIZE OF A SMALL PLATE, TO MIXTURES OF WHEAT, BARLEY AND RYE AS SMALL AS A TABLESPOON. THEY CAN BE FLAVORED WITH CHEESE AND HERBS AND CAN ALSO BE SWEET, FLAVORED WITH ANISEED , CINNAMON AND STUDDED WITH RAISINS OR JUTS.
