Gavalas Cabernet-sauvignon Fragospito 2012 red wine in short. Prealcoholic maceration in low temperatures and classic red vinification under controlled temperature. It ages for 30 months out of which 18 months in oak French barriques. Perfect for long ageing. You can drink now or keep it for at least 10-15 years. Eighteen months in oak barrels gives this wine its deep, dark color and splendid aromas of chocolate and winter spices. It has a thick, smooth body and soft tannins and a long ageing potential.. Intensive tannins and long after taste. Enjoy it with red meat, grilled vegetables, game, spicy sauce and hard cheese. Best served at: 18 °C. Region: Vorias, Heraklion
About Gavalas winery
Emmanuel Gavalas planted the first vineyards in 1906. At that time he would use the Minoan dressed stone treading tank that used to be at the village of Agios Thomas, where he came from, to tread the grapes. At that time, the must fermented into big storage jars. Then he transported the wine into leather flasks and he sold it to taverns and stores. Some years later he settled down at Vorias, a village 15km away from Agios Thomas where he planted new vineyards. Then he used to take the grapes to well known wineries. .
In 2001 the vineyards became part of the organic cultivation system, as actual owner, Nikos Gavalas believe that the organic products protect the environment from the pesticides’ contamination as well as the consumers and us, the cultivators and our children. In 2004 he set up a most modern winery into the vineyards. Therefore, every stage of the vinification from the production to the bottling happen in verticalized, modern unit. Notably, it represents one of the largest organic viticulture on the island of Crete.
the vineyards
Located 37km south of the town of Heraklion. There, the winery buildings covers an area of 980m2 in a privately-owned estate of 7.000 m2 with its vineyards extended in 6.9 acres of land. From which the 2.2 acres are new plantings scheduled to be put at an early date in the production line. Furthermore, Gavalas Domaine exclusively produces and bottles wine from their own production by using organic farming techniques.
In the vineyards are cultivated the Cretan grapes varieties of Vilana, Kotsifali, Mantilari, the international Chardonnay, Sauvignon blanc, Syrah and Cabernet Sauvignon as well as Malvazia di Candia Aromatica, a variety known since the Venetian era.
